To budget labor for a banquet position based on a statistic such as number of banquet covers, first create that statistic in the Chart of Accounts, then build a labor model that uses it. Follow the steps below.
In the Accounting module, go to Chart of Accounts.
Click Non-Financial COA's – these are your statistics.
3. Click + Statistic and fill in the Item Name and Description.
The statistic now appears in the Statistics section of the Daily Activity Entry. It may not import automatically, so let the Night Audit team know to enter it manually on the statistics page each day.
4. Go to the Labor Management module and open the Models page.
5. Create a model for the banquet position and choose Factor of Statistics or Range of Statistics.
6. Select the Banquet Covers statistic you created, then set the minutes allotted for the factor or range.
This statistic also appears on the forecast page of Labor Management, where you can enter a daily forecast. The forecast gives you a budget for the number of hours you can add to the schedule for this position.
